You can do restore file system option 5 on recovery menu that helps fix a lot of issues and restores the current firmware back to it's original state

You might have not entered recovery mode it must have switched from hdmi to scart.

turn off the PS3 (with the power on/off sensor on the front of the console) then press the power on/off sensor for 5 seconds, you should hear a double beep which indicates the AV settings have been reset.

when done you can enter recovery mode

How to enter recovery mode!
1. Turn off your PS3.

2. Hold down the power button and wait for your PS3 to turn on and off.

3. Once it has turned off, hold the power button until you hear 2 beeps.

4. When you hear the 2 beeps let go of the power button.

5. Plug in your controller and press the PS button.

6. The Recovery menu should be on your screen now!
